Does anyone know if there's a way to validate that CHT and EGT probes
are putting out the correct signal.
Mine are getting a bit old (2.5 years) and I'd like to be sure they're
working correctly.
I've never seen a chart of output voltage to temperature.
Does one exist?

Absolutely... but you'll need an accurate digital multimeter and a
reference temperature (known heat source).

BTW, when you start looking at the charts, you have "J" type thermocouples
for your CHT and "K" type thermocouples for your EGT.
You probably already know this, but...
Also keep in mind that each gauge manufacturer may calibrate their
temperature gauges to a different standard temperature. For example,
Westberg (Westach) calibrates their gauges to either 32 or 70 degrees F
depending on the intended application, whereas some companies calibrate to
other temps... like 60 degrees F.
So once you know your gauge's calibration temperature, you'll have to
consider the difference between the temperature of the wire "cold junction"
and the gauge's calibration temperature.
