If I go 125nm to an airport, shoot approaches, land (stretch legs), then
return home, does it count? Does the landing make it count as 2 separate
flights instead of one 250nm flight?

61.65(d)(2)(iii)(a) For an instrument-airplane rating, instrument training
on cross crountry flight procedures specific to airplanes that includes at
least one cross country flight in an airplane that is performed under IFR,
and consists of --
(A) a distance of at least 250nm along airways or ATC-directed
routing.

If you do the required three different types of approaches, sure it counts.
When you took your private pilot long x-c, did the fact that you landed at
one or more airports negate the logging of the trip?

Have you found a definition of "flight" (for this context)? :)

It has been said many times that you could fly to a vacation spot, spend a
few days on the beach enjoying your beverage of choice while the plane never
moves, then fly home at the end of the week and still count it as one
flight.

Or you could count it as two flights. :)

as long as it is 3 different types of approaches.. the cross country is done
under the hood or in IFR conditions.. and with an IFR flight plan in ATC
control... and you have your CFII with you.. not a safety pilot..
