Im very tempted to start lessons, but before I dive into the deep end, do
you have to regularly fly to keep your license (certain amount of touchdowns
per time period?) and is there anything I should know about hiring aircraft
if I do get my PPL? Any hassles hiring aircraft from other schools/places
other than the original one that you have learnt at, etc for a weekend away?

the pilot's licence is perpetual for life.
the requirement is that you have a medical every few years (every 5
until 40 then every two years until about 60 then annually I think)
and that you have had a bienniel flight review (its not an exam, just
a refresher) every two years.
to carry passengers you need to have done 3 flights in the last 90
days.
personally hiring sucks. you are paying top dollar for everything.
my suggestion, after you finish your training, is to seek out your
local SAAA guys and have a look at the homebuilding scene. most
homebuilts have better performance than the commercial offerings and
most cost less than a 4 wheel drive toorak tractor. hangarage is your
achillies heel. once you can get that sorted out then the ownership,
or part ownership, of a good homebuilt can bring flying costs down to
almost the fuel costs.
I fly a Wittman Tailwind and love it. My flying costs me $20.50 per
hour with about $150 or so in annual maintenance. About $400 in annual
memberships. Dinkum.
This year I look like cracking the 100hours before the annual
maintenance is due and having to do it earlier.
100 hrs should cost me under $3000. commercially that would cost at
least $15,000

Mark,
Best thing to do is talk to a number of flying schools and check out
their aircraft before deciding on which one. There’s no rule that says
you have to hire from where you learnt to fly and once you get your
license you can hire from just about anyone who is prepared to hire to
you, even some private owners. There’s normally a requirement for a
dual check beforehand though, which involves a couple of circuits and
maybe some airwork. Weekends away shouldn’t be a problem. I even took a
plane away for 2 months once! Tell us where you’re from as I'm sure
there’ll be someone here who can recommend something in your area

SAAA hey, thats a great idea I never thought about the home built scene.
A plane that is within my price range! haha! well maybe after new car and
house. haha! have to build a few more r/c planes before moving on to
something that big. (;
